CHurro Cupcakes
There’s only 3 weeks until Cinco de Mayo! I happen to be a huge fan of this holiday…I mean, tacos, guacamole, margaritas…what’s not to love?!
But I’m kicking this fiesta off on the sweet side with some Churro Cupcakes 😋
The best part? There’s a couple shortcuts including box cake mix and store bought churros- you really just need to focus on the frosting. So let’s get to it!
Ingredients:
For Cupcakes:
1 box French Vanilla cake mix plus ingredients on back of box
1 (3.4 oz) box instant vanilla pudding mix just the dry mix
1 Tbsp ground cinnamon
For Frosting:
8 tbsp butter, softened
4 tbsp cream cheese, softened
1 tbsp vanilla
2 tsp ground cinnamon
2 Tbsp milk
About 3 cups powdered sugar
Cinnamon sugar
Baked churros chopped into 1-2" pieces for toppers*
*I found some at my local ethnic grocery store!
Directions:
Preheat oven to 350 degrees F. Line two muffin tins with about 16 paper liners. Set aside.
Meanwhile, in a large bowl, prepare the cake mix according to package directions. Stir the pudding mix and cinnamon into the batter to combine. Portion the batter evenly among the muffin tins, filling about 3/4" of the way full. Bake for approx. 15-18 minutes or until a toothpick inserted near the center comes out clean or with moist crumbs. Cool completely.
In the bowl of a stand mixer, cream together the butter, vanilla and cinnamon until creamy. Gradually add the powdered sugar in, about one cup at a time, until thick and fluffy. Use the milk to thin out the frosting if needed.
Pipe frosting high onto cooled cupcakes and garnish with a freshly baked churro piece and a dusting of cinnamon sugar.

Strawberry Shortcake Easter Cocktail
Who says the kids get to have all the fun this Easter?! Us grown ups deserve a special treat too! Personally, I prefer my treats served in a glass. 😉 This cocktail literally tastes like boozy strawberry shortcake! Trust me, you’re going to love it.
Ingredients:
“Whipped” Vanilla Flavored Vodka
Strawberry Cream Liqueur
Half and Half
Strawberry Puree
Honey & Fancy Sprinkles for the rim!
Directions:
Dip rim of the glass in honey and then Fancy Sprinkles
Fill glass to the top with ice
Pour in vodka, half and half, puree, and strawberry liqueur
Stir thoroughly until well mixed

Fancy Bunny Chow
Muddy buddies, puppy chow…whatever you normally call it, this month it’s Bunny Chow and it’s gettin fancy! Below find the recipe for this fun and festive treat to make for Easter!
Ingredients
9 cups Chex Cereal
1 cup white chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 tsp. vanilla extract
1 1/2 cups powdered sugar
1 bag pastel M&Ms (or other Easter candy)
Fancy Sprinkles* & Prism Powder
*I used the “Hey Jude” blend of the new Spring collection
Instructions
In a large bowl, measure out cereal and put to the set aside.
In a microwavable bowl, microwave white chocolate chips, butter, and peanut butter uncovered on High for 1 minute. Stir until smooth. Heat in 30 second increments if more time is needed.
Stir in vanilla. Pour mixture over cereal, stirring until evenly coated.
Add half of the powdered sugar into a 2-gallon resealable food-storage plastic bag, pour cereal mixture into the bag and then add the remaining powdered sugar.
Seal bag and shake until well coated. Spread on waxed paper to cool. Add in candies, Fancy Sprinkles and dust on Prism Powder
Enjoy!

Valentines Sweets & Treats
What’s Valentines without a little sugar? Here are four super sweet ideas for some special Valentine themed treats!
Candy Charcuterie Board
As much fun as it is to display meats and cheese, it’s even more fun to play around with candy! Fitting with this year’s ombre theme, I arranged the candies from darkest at the top to lightest at the bottom.
I find most of my speciality seasonal candies at Home Goods, a few from Target, and the red “x’s” are part of the Trader Joe’s X’s and O’s gummies!
Mini Heart Waffle Cake
Yes, you read that right- I made a “cake” out of mini heart waffles! After seeing this topper from GlamfettiCo, I knew I needed to do something special with it!
With this mini heart shaped waffle maker, I made around 25 waffles then assembled them all together. I used a little frosting in the middle like glue. 😊 I’m completely in love with how it turned out!
Raspberry & Brownie Mini Trifles
This is such a quick and easy (but still impressive looking) dessert to whip up! I used the following items:
Fresh raspberries
Store bought Brownie Bites
Homemade whip cream

Ombre Cupcakes
This last one is a super simple idea, but makes an impact!
Party tip: color both your batter and frosting with food coloring
That’s really it! I used a box cake mix and store bought frosting, but these cupcakes look custom and match perfectly with my theme!
They are beautiful all on their own, but these ombre heart cupcake toppers put them over the edge!

Bunny Bark
It all begins with an idea.
This year I made a cute and colorful little treat of candy bark with melting chocolates and some Easter candy! It was pretty simple and would be a great activity to do with kids. I lay out the process below and give tips on what I would do differently next time- enjoy!
You'll need to start with your supplies of:
Candy Melts (I used white as my base + pink, blue & purple)
4 small bowls
4 spatulas or something to stir with
Parchment paper
A "drying surface" *
Toppings of your choice
*I decided to go with a baking sheet instead of the cutting board to avoid spill over
First, microwave your candy melts until they are nice and smooth. You'll want to do this in small increments- I started with about 1 minute and 30 seconds for the first round, then every round after that did only about 45 seconds at a time. Make sure to remove your bowls of candy melts from the microwave each time, stirring the coating chocolate around to avoid any hot spots- it's a pretty tedious process, but works well!
Second, cover your drying surface with parchment paper then pour out your "base" color. This is the part where I would do things differently- I melted only my white candy coat first, poured it out, then microwaved my other colors after that. The final look turned out fine, but if you want more of that "swirl" look, I would recommend heating up all of the chocolates and one time.
As you can see, I have more of a layered look because by the time my other colors were melted, the white base was already hardened (whoops). Next, while the chocolate is still melty, add on your toppings. I chose to go with two types of sprinkles and pastel colored M&MS 😋
And here's the final product!
Lastly, after the bark has completely set, just break it apart in pieces and serve! It's a tad sweet for me all on its own (I'm sure kiddos would love it) so I might break it into small pieces and mix it up with some salty pretzels or popcorn!
